Carotenes are particles in food that are changed into Vitamin A. The body determines itself when and how much this takes place. The most visible and recognizable of all of the Carotenes is Beta Carotene, which is the easiest to convert into Vitamin A. Beta Carotenes are found in a wide variety of foods. Carotenes act as antioxidants that help to prevent heart disease, eye malfunctions and cancer.
